Summer Raw honey
Never filtered or heated, raw honey is excellent for health because it retains traces of pollen, propolis, beeswax, original properties and aromas.
This raw honey crystallizes in the jar and is consumed in this form. Harvested from mid-August to the end of September.
To be melted in a green tea with lemon slices or to introduce into a smoothie, this honey is the essential element to add in any season.
Raw honey is only liquid in the 4 to 8 weeks following the harvest in the hives. If you encounter raw honeys which are always of equal crystallization and very creamy, the beekeeper has surely added a stage to the packaging: either brewing or sowing the honey. Most purists will say that it is no longer raw honey!
