Guinea fowl liver mousse
Guinea fowl liver mousse is similar to duck foie gras. However unlike duck, the guinea fowl liver, gorging itself in 30 to 40% of cases, creating what is called a blond liver. Thus, guinea fowl mousse is a nice balance between a foie gras and a traditional mousse.
Ingredients: Duck fat, guinea fowl liver, eggs, 2% milk, 15% cream, sliced bread, butter, onions, salt, garlic, spices.
